The article examines labour performance controlling as a key instrument of operational management in food industry enterprises, using PJSC “Kyiv Confectionery Factory Roshen” as a case study. The purpose of the research is to substantiate the role of labour performance controlling in improving operational efficiency, production stability, and productivity under conditions of increasing digitalisation and complexity of manufacturing processes. The study is based on a systematic approach that combines methods of operational analysis, performance measurement, comparison of planned and actual indicators, and analytical generalisation of best management practices.
The article reveals that effective labour performance controlling enables enterprises to synchronise labour indicators with operational parameters such as production rhythm, equipment utilisation, downtime reduction, and compliance with technological standards. Particular attention is paid to modern controlling tools, including key performance indicators (KPI), labour standardisation, overall equipment effectiveness (OEE), ERP systems, lean management principles, and digital analytics. The integration of these tools into the operational management system allows timely identification of deviations, improvement of resource allocation, and enhancement of decision-making quality.
The practical analysis of Roshen demonstrates that labour performance controlling contributes to reducing production losses, optimising employee workload, improving production planning accuracy, and strengthening technological discipline. The study also highlights the growing importance of digital solutions, including predictive analytics, automated data collection, and AI-based monitoring systems, in increasing the accuracy and responsiveness of operational control. The results confirm that labour performance controlling is an integral component of operational management that supports sustainable productivity growth, operational flexibility, and competitiveness of food industry enterprises in a dynamic production environment.
